Injera is an Ethiopian flatbread made out of the grains called teff. This bread goes along with Ethiopia’s rich stews and sauces. 

 

This is a national food for Ethiopia, Somalia and Eritrea. It is worthy noting that teff flour does not contain gluten. 

 

The Teff Company in the United States produces and supplies teff flour to Ethiopian and Eritrean expatriates in the US.
